Why did we select the startup? The Every Co has demonstrated industrial-scale precision fermentation delivering functional egg white proteins, a rare feat in the precision fermentation space. Now, the question is about how to integrate this protein into ingredient lists, in which applications…
Why now?
The momentum is strong due to the egg shortages in the US, and now in parts of Europe. From the startup point of view, with the Series D funding, as well as the announcement of a large UAE-based 4M-litre facility, it has an ability to scale. As Ingredion is already invested in Every Co, looking at its direct competitor Onego could be relevant for Symrise.
