While it reflects our discussion, its goal is not to be exhaustive but to provide a broad guideline to what could be relevant regarding news to “catch” and then analyse.

- Sugar & sweeteners: priority 1
- Taste modification: priority 2 (bitter maskers, mouthfeel enhancement…)
- Healthy ageing ingredients (like lactoferrin, HMOs: interest even if not a priority)
- CDMOs
- Excluded: dairy & eggs, colouring
Cellular agriculture
- In:
- High priority: meat, fat, vanilla & coffee
- Secondary: cocoa (only if highly relevant)
- Excluded: fish
Biomass fermentation
- In:
- All applications are in scope (meat, etc.)
- Excluded: algae, CO2⇒ Protein
