While it reflects our discussion, its goal is not to be exhaustive but to provide a broad guideline to what could be relevant regarding news to “catch” and then analyse.

• In:
  • Sugar & sweeteners: priority 1
  • Taste modification: priority 2 (bitter maskers, mouthfeel enhancement…)
  • Healthy ageing ingredients (like lactoferrin, HMOs: interest even if not a priority)
  • CDMOs
• Excluded: dairy & eggs, colouring

Cellular agriculture

• In:
  • High priority: meat, fat, vanilla & coffee
  • Secondary: cocoa (only if highly relevant)
• Excluded: fish

Biomass fermentation

• In:
  • All applications are in scope (meat, etc.)
• Excluded: algae, CO2⇒ Protein
